Lemon Lavender Shortbread Cookies

Description
Delightfully fragrant cookies with a zesty lemon twist.
Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1 tablespoon dried culinary lavender
- Zest of 1 lemon
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Gradually add the flour, mixing until just combined.
- Stir in the dried lavender, lemon zest, and salt until evenly distributed.
- Roll the dough into a log shape, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Slice the chilled dough into 1/4-inch thick rounds and place them on the prepared baking sheet.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
